The drying of seed, as a carrier of life, is a complex process of heat and mass transfer, because it should be optimized based on the mutual effects of the internal and external transfer conditions and the viability of seeds. In the paper, an unsteady drying dynamic equation was established and the effect of temperature rising rate on the drying rate was quantitatively analyzed by the compared drying experiments with different ways of heat supply (constant and varied temperature drying agent). A simulation process of the varied temperature drying technique was carried out and the heat and mass transfer mechanism relating to the seed structure was studied. It supplied a reliable theoretical base for the new drying technology.%以蔬菜种子为对象,建立了物料的非稳态干燥动力学简化方程,并以不同供热方式(恒温与变温)进行了对比干燥实验和变温干燥工艺的模拟,结合种子的生物结构特性探讨了物料传热传质机理,为蔬菜种子干燥新技术与新工艺提供了理论依据。
