黑龙江两种生态类型水域细鳞鱼肌肉营养成分的比较分析

         

摘要

The nutritional ingredient in muscle of lenok was measured. The lenok in the experiment was got from the tributary of Hailang stream of Mudanjiang and Hutou section of the upper stream of Wusulijiang. The results showed that the contents of protein, saturated fatty acid (SFA), monounsaturated fatty acid (MUFA) and essential amino acid (EAA) in the muscle of Lenok in Mudanjiang were markedly higher than those in the muscle of Lenok in Wusulijiang (P<0.05). The essential amino acid index (EAAI) of Lenok in Mudanjiang was a little higher than that of Lenok in Wusulijiang (P<0.05). The unsaturated fatty acid (PUFA) of Lenok in Mudanjiang was markedly lower than that of Lenok in Wusulijiang (P<0.05). The results explained the nutrition of Lenok was rich, and also indicated the diversity of content and proportion of nutritional ingredient in the muscle of Lenok in Mudanjiang and Wusulijiang.%文章对牡丹江海浪河支流细鳞鱼和乌苏里江上游虎头段细鳞鱼成鱼的肌肉营养成分进行测定,从营养成分的角度来分析和评价不同生态类型水域细鳞鱼的品质.结果表明,牡丹江细鳞鱼肌肉的水分、粗脂肪和灰分含量与乌苏里江细鳞鱼差异不显著(P>0.05),但牡丹江细鳞鱼肌肉的蛋白质含量显著高于后者(P<0.05).牡丹江细鳞鱼的饱和脂肪酸(SFA)含量、单不饱和脂肪酸(MUFA)含量均显著高于乌苏里江细鳞鱼(P<0.05),而多不饱和脂肪酸(PUFA)却显著低于后者(P<0.05).牡丹江细鳞鱼和乌苏里江细鳞鱼的氨基酸总含量(TAA)、鲜味氨基酸(DAA)总含量无显著差异(P>0.05);而必需氨基酸(EAA)总量却显著高于乌苏里江细鳞鱼.牡丹江细鳞鱼的EAAI分值略高于乌苏里江细鳞鱼.结果说明细鳞鱼营养丰富,同时也表明了牡丹江细鳞鱼和乌苏里江细鳞鱼肌肉营养成分含量、比例的多样性.
