本文采用同轴电极结构的处理室和能够产生双极性单指数衰减波的脉冲灭菌装置对液体食品进行了灭活处理,探讨了液体食品分别在常压、加气压、除气处理、除气后再加气压下的高压脉冲电场(pulse electric field,PEF)灭菌效果.实验研究表明:在脉冲电压灭菌前,进行加压处理,有利于脉冲电压灭菌,而在脉冲电压灭菌前除气处理,不利于脉冲电压灭菌.%The device consists of a processing chamber of coaxial electrodes structure and it is capable of producing bipolar single-exponential decay of the pulse electric which is used in this experiment for liquid food sterilization.The sterilization effect of high-voltage pulsed electric field (Pulse Electric Field,PEF) under normal atmospheric pressure,air pressure increases,degassing treatment and degassing coupled with the pressure increases are studied.Experimental results show that increasing the air pressure before PEF is favor of sterilization,and that degassing treatment is not conducive to sterilize.
