番茄冷链运输保鲜技术研究

         

摘要

In the process of cold chain transportation, controlling the transport time and the temperature can effectively reduce the loss and energy consumption and can transport the fruits and vegetables to the destination fastly and effectively. Three cold chain modes of transportation were simulated, including EPS thermal insulation box transportation, cold storage insulation box transportation and 5℃ cold-chain transportation; based on the temperature, nutrients and sensory evaluation of tomatoes, the different modes of transportation under different conditions were determined. The results show that, EPS thermal insulation box transportation is suitable for short distance transportation, and the transport time is not more than 24 h;cold storage insulation box transportation is suitable for short and middle distance transportation, and the transport time is not more than 48 h;5℃ cold-chain transportation is suitable for long distance transportation, and the tomatoes can still maintain good quality after 72 h.%在冷链运输过程中,控制冷链运输的时长和温度能有效的减少运输过程中的损失和能耗,使得果蔬快速、优质地运输到目的地。模拟了三种冷链运输方式:EPS保温箱运输、蓄冷保温箱运输和5℃冷链运输;通过对番茄品温、营养物质和感官评价来确定不同条件下的不同运输方式。结果表明,EPS保温箱适合短距离运输,运输时长不超过24 h;蓄冷保温箱适合中短距离运输,时长不超过48 h;5℃冷链运输适合长距离运输,番茄在72 h后仍能保持良好的品质。
