Birthplace of Cantonese Cuisine

         

摘要

AN old Chinese saying goes,“Guangdong is for food and Fengcheng is for chefs.”Shunde,known as Fengcheng in ancient times,is a town in the south-central part of Guangdong Province,which enjoys a reputation as the“hometown of Chinese chefs”and“birthplace of Cantonese cuisine.”In 2014,Shunde was designated as a UNESCO Creative City of Gastronomy.Shunde is the land of fish and rice,and its people love cooking with local ingredients.As Shunde chefs moved to Guangzhou,Hong Kong,and Macao,or emigrated to Southeast Asia,Shunde food gained popularity around the world.Compared with other styles of Cantonese cuisine,Shunde dishes feature simpler and easily obtained ingredients.Nothing is more important than freshness and an umami taste.Being a town in the Pearl River Delta,Shunde is blessed with a rich variety of freshwater fish.
