In this paper, physicochemical properties of L-tryptophan and the applications in the fields of medicine, food and feed additives are reviewed. The synthesis technique of L-tryptophan generally can be divided into direct fermentation method, microbial conversion method and enzymatic method. The separation and purification of L-Tryptophan are usually carried out by ion exchange method combined with crystallization. Crystals of L-tryptophan with large particle size can be obtained by proper control of crystallization process. In addition, it has been discovered that polymorph of L-tryptophan can be obtained by sublimation and other new polymorphs may be formed by changing crystallization conditions.
