In the end of supply chain, supermarket has already become the most important channel at the food retail node; it becomes the key to the management and control of food safety. The research on the model of food safety forecasting in supermarket can not only help supermarket get the exact food shelf life to improve the acuity of supermarket's attention, but also help supermarket hold the safety problem in the whole food supply chain system, which can enhance the supermarket's management and control of food safety problem at its upstream nodes. Through the research on food safe shelf life, the Monte Carlo method is used to compute accurately the examined microbial number, and a method to compute food safe shelf life is presented. Finally, the method using the computed food safety shelf life to analyze food safety problem and seek food safety hidden trouble is provided, which can realize the supermarket manage and control food safety in food supply chain.
