An enzyme amperometric glucose sensor in a FIA system, working in non-aqueous medium, is proposed. The enzyme cell was connected to a FIA system, which contained the flow-through amperometric detector. Electroehemical reaction parameters were studied. Comparative tests were performed to determine the efficiency of an organic salt as electron mediator in amperometric detection. The effect of different organic solvents properties was studied on biosensor sensitivity. The minimum percentage of buffer necessary for enzymatic activity in the organic phase was also determined. Glucose content of 12 authentic food samples was measured and compared with results obtained by UV photometric method.
