A general formula of the second-order variable density projection method combined with the level set method is developed to simulate unsteady incompressible variable density multiphase flow with phase change. A subcell conception is introduced in a modified mass transfer model. The third-order ENO scheme and second-order semi-implicit Crank-Nicholson scheme is employed to update the convective and diffusion terms respectively. The level set approach is employed to implicitly capture the interface for multiphase flows. After validation of the temporal accuracy of the current model for an interfacial flow of dam break by comparing with the existed experiment data, phase change and dynamics associated with a single bubble in two-dimension and three-dimension during the nucleate boiling are studied numerically via the present modeling.
