The formation of stable water in oil emulsions in crude oil production is caused by the presence of resins and asphaltene which can organize and form rigid films at oil/water interface. Int he demulsification process, demulsifier is considered to produce changes in interface rheological properteis. This is because demulsification involves displacement of natural surfactants, such as asphaltenes and resins from the film surrounding the water drop.
