摘要

In this paper a morphological analysis of the size and shape of sugar crystal for quality control inspection is performed. An algorithm for morphological characterization using digital image processing was developed and then a statistic analysis was performed. The samples were obtained from a sugar refinery and parameters of interest, such as equivalent diameter, elongation, mean aperture (MA), standard deviation and coefficient of variance (CV) were calculated. Finally, an automated tool for morphological analysis using MATLAB was developed and the results were validate by using a manual method.
