This study was to investigate the time-dependent dissolving and degradation behaviors of saccharides from bamboo during hot water pre-extraction under elevated temperatures between 150 to 180°C, aiming at developing the predicting models for the content of xylo-oligomer, xylose, arabinose, and furfural during hot water extraction processes. The results showed that a good prediction of these species contents can be greatly improved by incorporating pH ([H*]) in the models. The activation energies were calculated in these models, i.e., 98.2, 84.9, 60.7, 143.5, 137.0, and 38.8kJ/mol for the hydrolysis of xylan, xylo-oligomer, arabinan, and the degradation of xylose, arabinose, furfural, respectively. These models are very helpful for the investigation on the degradation of hemicellulose's carbohydrates during the hot water pre-extraction of bamboo and thus provide a guidance in the process control and optimization.
