Studies on Enzymic Activities of 'Xiangwei' Mushroom under pH Press

This study aimed at the changes of enzymic activities of "Xiangwei" mushroom under pH press. Three different PD culturing medium with natural, acid, and alkatinous pH were used for "Xiangwei" mushroom culturing indoor for 7 days. Then, three kinds of enzymes of amylase, purocatechase and carboxymethyl cellulose enzyme (CMC) were isolated respectively according to references published and activities were detected by ultraviolet spectrophotometer (UV-754). The results found that activities of amylase got the highest value on the II th days: activities of cellulose got the biggest on the 15th days and activities of purocatechase got the highest value on the 12th days under acid press. Activities of amylase got the highest on the 12 th days: activities of cellulose got the highest value on the 15th days, and purocatechase activities got the highest value on the 13th days under natural pH environments. In addition, activities of amylase got the highest value on the 11 th days: activities of cellulose got the highe st on the 15th days, and activities of purocatechase got the highest value on the 12 th days under alkali nous press.
