When available, statistics indicate that fires originating in restaurants usually account for the most reported fires for assembly buildings. Not surprisingly, cooking often ranks first amongst the listed fire causes(~1,2). Nonetheless, for such buildings, insurance companies might be prone to search for possible "red flag" (e.g. unsuccessful business) and consider possible arson.
