Near infrared (NIR) spectroscopy is an adequate technique for the determination of majorcomponents of milk: fat protein, casein, somatic cell count (SCC), lactose, and total solids in milkwithout any pretreatment. It is also useful to monitor rennet coagulation in milk via optic probe, and torecognize cow’s health condition as a diagnostic tool. This research illustrates the basic principlesand analysis procedure about NIR spectroscopy. New research about major components analysis,online determination and other application in milk quality were reviewed. Some problems that lied inthe research about milk analysis via NIR spectroscopy were analyzed, and suggestions and issuesfor further research in this field were also put forward.
