Soybean seeds contain approximately 35% protein per dry weight. This is the highest among the major crops. The nutritional value of soybean proteins is one of the highest among those of plant proteins. Soybean seeds are used for the production of traditional foods, such as tofu, kohri-tofu, and ganmodoki (tofu fritters), and, recently, soybean proteins have been used to improve the quality of ham and sausage. These utilizations are based on the physicochemical properties of soybean proteins. In addition, it has been reported that soybean proteins have a function to improve the lipid metabolism in the human body. Thus, soybean proteins are very useful in the human diet.
