Reducing Property of Gelatin on Silver Ion

摘要

The silver reducing property (SRP) of gelatin was measured by the silver colloid method. The SRP of gelatin was similar to the SRP of sugar in absorbance spectra shape, pH dependence and time dependence. The addition of amino acid (Gly, Met or Lys) did not affected SRP of gelatin. From these results, it was suggested that the SRP of gelatin was caused by the structure similar to sugar.
