摘要

The advantage of using enzymes in industrial processes comes from their specificity (high or low) to suit the desired end product. In addition, little to no byproducts are formed and the optimal enzymatic activity occurs under defined reaction conditions, which are most often relatively mild compared to more traditional chemistries. Enzymes are cost effective, non-polluting process aids.
