粮食质量安全关系到国计民生.近几年来,随着粮食的不断增产、人民生活水平的不断提高和人们对化学药品毒副作用认识的不断加深以及对健康要求的不断提高,粮食的质量安全也就越来越被人们所重视.砷广泛存在于土壤、沉积物、水体和动、植物体内,微量砷是动物和人体必需的营养元素,然而,过量砷的供应或微量砷的长期累积会对植物、动物和人体产生毒害作用.随着环境污染的日益严重,粮食中无机砷的超标情况屡有发生,严重危害着消费者的身体健康,同时给我们的食品安全带来了极大的隐患,造成社会的不稳定.砷通过土壤-植物(水稻)系统进入人体后在人体富集,从而可以引发肺癌、膀胱癌、皮肤癌等一系列疾病,而无机砷是砷中起毒害作用的主要形态.通过近几年湖南省原粮卫生调查发现以糙米代替稻谷所作的重金属调查有20％至35％的稻谷无机砷超标,而平常所做的大米无机砷检测超标率几乎不到1％.%The safety of grain is a big issue about our people and country.Recently,with the increasing of food yield and the enhancement of our living standard,deeply concern of the poison of chemicals and demand of the health,people now are paying more attention to the safety of grain.Arsenic can exist widely in soil、sediments、water、plants and animals,the proper amount intaking is necessary for human body,but while the accumulating from a long time and overtaking for a short time can be a poison for the creature.With the environment pollution are getting worse,it is common to find out that the content of inorganic arsenic exceed the standard which was limited by the related administration.It is seriously harmful for the health of consumers and can cause some social problems if we let it be.Arsenic was enriched in the human body by soil-rice system,which could initiate lung cancer,bladder cancer,skin cancer and a series of diseases,and inorganic arsenic was the main form of toxic effect.
