Process for the production of long-chain inulin, the inulin produced in this way and its use

A process is described which produces long-chain inulin, that is free of saccharides with chain lengths of <10, at the same time producing glucose and fructose. This process uses a raw inulin suspension of 20-70 weight % treated with hydrolases at 30-70oC, thus degrading short-chain products to mono- and disaccharides. Long-chain inulin is then separated from the mono- and disaccharides and dried.
