Demand grows for low-lin beans

THE number of acres being offered to farmers by seed companies and processors for contract production of low-linolenic soybeans is expanding for 2006 — primarily in Iowa and Ohio. But it won't be long before this new type of soybean will be grown ona much wider scale. These new varieties contain reduced levels of linolenic acid, a substance that can shorten the shelf life of soy oil and contribute to off-flavors. For decades, soy oil has been hydrogenated to give the oil longer shelf life and better taste.
