An attempt has been made to prepare hydrophobic, thermoplastic material through esterification of potato starch with long-chain unsaturated fatty acid. The esterification was conducted in the presence of fungal lipase from Candida antarctica immobilized on a polymer carrier. Reaction was conducted in a microwave field and, for comparison, under conventional heating. The completion of the esterification reaction was confirmed by spectroscopic FT-IR and 1H NMR methods, X-ray powder diffraction and scanning electron microscopy (SEM). It was found that the obtained product exhibited higher hydrophobicity than native potato starch.
