焙烤茶薯片研制及产品评价

摘要

以马铃薯全粉、面粉、糖、植物黄油等为原料，添加绿茶粉，通过焙烤方式得到绿茶薯片。确定了产品的配方和加工工艺条件，并对产品品质作出评价。%Added green tea powder,the potato powder,flour,sugar,vegetable butter,etcetera,as its raw materials and get baking crisps with green tea by baking method.The study confirmed the product formulation and the processing technology conditions.And we make the evaluation of the product quality.
