A lead-free and sterile century egg processing method and processing device, and an application thereof in instant century egg and minced meat congee. The method comprises: adjusting the concentration of protein in egg white, and then directly adding auxiliary materials such as a food-grade alkaline auxiliary material, salt, tea juice, tannin, and a seasoning to the egg white and an egg yolk, separately; stirring same well and performing vacuum degassing to form alkaline colloidal egg white and an alkaline colloidal or solid egg yolk; then obtaining stuffed century egg semifinished products by filling using a cup-shaped egg stuffed product filling device and a sausage-shaped egg stuffed product filling device; and processing same to obtain a lead-free and sterile cup-shaped stuffed century egg and sausage-shaped stuffed century egg. Thus, production of century eggs in a production line is achieved. Moreover, an industrial production method for instant century egg and minced meat congee is further obtained.
