The method involves selecting a donor oyster, and opening the oyster to remove the gills. The oyster is positioned so that the mantle is relaxed, and a strip (7) of the mantle is cut on the periphery of the mantle. The strip is spread on a clean and damp cloth so as to retain some of the mucus, and a median bead (3.2) is excised. The exudate strip is removed, and an external bead (3.1) and an external epithelium (5) are separated. An internal epithelium (6), an internal bead (3.3), and an associated fibrous tissue are removed, and the strip is cut into squares of 2 to 4 mm side.
