The present invention relates to kimchi comprising a fermented composition manufactured from novel lactic acid bacteria Lactobacillus plantarum DGK-17 (KACC 81028BP) derived from kimchi and a manufacturing method thereof. More particularly, the present invention relates to kimchi preventing deterioration of the quality of kimchi caused by lactic acid bacteria and having excellent anticancer activity regarding colon cancer and antimicrobial activity regarding food poisoning bacteria even at a low concentration by processing kimchi using the fermented composition in which the Lactobacillus plantarum DGK-17 (KACC 81028BP) is cultured.
