Variations in the physical properties of raw cashewnuts were studied for five levels of moisture content in the range of 8.80 to 22.28%d.b for the variety VRI 2 and 8.50 to 21.15%d.b for the variety VRI 3. The data as a function of moisture content were fitted to regression equation that describe the dependence of physical properties and its variation with respect to varieties. The principal nut dimensions, equilvalent diameter, sphericity and 100-nut weight were found to be lineraly related to moisture content. Expansion in nut dimensions were more pronounced in VRI 2 than VRI 3. Frequency distribution curve for both the varieties showed normal distribution. All the physical properties except bulk density increased with increase in the selected range of moisture contents. But VRI 2 values were found to be lower than VRI 3 mainly due to size of the raw cashewnut.
