US researchers study saltwater treatment for raw oysters

The curative powers of saltwater are well known and now a team of oyster farmers and researchers at the Virginia Institute of Marine Science (VIMS) is looking at how oyster farmers can use saltwater prior to harvest to virtually eliminate a bacteriumthat can cause sickness in raw oyster consumers. The idea is promising, but attaining US Food and Drug Administration (FDA) registration as a safe and effective post-harvest processing (PHP) method for shellfish will take a while.
