摘要

The sources and historical studies relating to butcheries are numerous, but mainly concern urban settlements. What abouttheir shape in the countryside and their perception by archaeologists? The study of five contemporary village butcher shopsin the Paris area, according to resolutions ranging from the observation of elevated structures to exhaustive excavations andthe study of the artefacts, and through archival studies, highlights the fugacity of the indices and the difficulty to identifysuch establishments. The study of animal bone deposits, through the example of Roissy-en-France (North of France), partlyallows to fill these documentary gaps and to suggest identification grids for the butchery activity.
