This research was aimed to discover pigskin gelatin and its enzymatic hydrolyzates impact on mouse weight and the loaded swimming time. Six enzymes (trypsin, neutral protease, acidic protease, alkaline protease, pepsin and papain) hydrolyse in the optimum condition respectively. Choose hydrolyzates of NO.Ⅰand NO.Ⅱprotease, administered to mice by gavage.Results showed comparing with distilled group, the body weight of mice significantly lower when gavaged with gelatin (P<0.01), gelatin can significantly reduce mice body weight;the enzymatic hydrolysates of pigskin gelatin could significantly prolong mice swimming time (P<0.01), when gavaged with hydrolyzates of NO.Ⅰprotease,mice swimming time could last (3 668.5±348.12) seconds, while gelatin could reduce mice swimming time.%探讨猪皮明胶及其酶解产物对小鼠体重以及负重游泳时间的影响。分别选用胃蛋白酶、胰蛋白酶、酸性蛋白酶、碱性蛋白酶、中性蛋白酶、木瓜蛋白酶酶解猪皮明胶,选用猪皮明胶、Ⅰ号蛋白酶酶解物、Ⅱ号蛋白酶酶解物,经口灌胃给予小鼠。结果表明:与对照组相比,猪皮明胶组小鼠体重显著降低(P<0.01),猪皮明胶能够显著控制小鼠生长期体重增长;Ⅰ号蛋白酶酶解物组小鼠负重游泳时间长达(3668.5±348.12)s,两种猪皮明胶酶解物均能显著延长小鼠负重游泳时间(P<0.01)。
