In order to optimize the conditions for extracting leaf proteins in Sesbania cannabina, single factor tests, orthogonal experimental design, variance analysis and multiple comparisons were applied to study the ef-fects of different factors and optimize the parameters. Results showed that:the five affecting factors for protein yield rank from strong to weak as extraction temperature, extraction time, material/solvent ratio, NaCl concen-tration, and pH. The optimal extraction conditions were material/solvent ratio 1:20 (g/mL), pH 8, NaCl con-centration 2%, extracting time 120 min and extraction temperature 60℃. The yield of protein under the optimal conditions was 40.02 mg/g.%采用单因素试验、正交设计试验、方差分析和多重比较等方法,研究不同因素对田菁叶片蛋白质提取的影响,确定提取的最佳工艺参数.结果表明:影响田菁叶片蛋白质提取率的主次因素依次为提取温度、提取时间、料液比、盐浓度和pH值;提取的最佳工艺参数为:料液比1:20(g/mL)、pH 8、NaCl 2%、提取温度60℃,提取时间120 min.在此条件下,田菁叶片蛋白质的提取率可达40.02 mg/g.
