酶法提取柚子皮果胶的研究

         

摘要

Objective To study the enzymatic extraction of pectin in the shaddock peel.Methods The water-soluble pectin in the shaddock peel powder was first extracted by hot water,then the pectin in the residue of the powder was extracted by cellulase solution,followed by pectinase solution.Results The pectin extraction rate of hot water,cellulase solution and pectinase solution was 12.7%,11.7% and 5.5%,respectively,and the total extraction rate was as high as 29.9%.Conclusion The total extraction rate of pectin in the shaddock peel was high with the sequential extraction ofcellulase solution and pectinase solution.%目的 研究酶法提取柚子皮果胶的方法.方法 先用热水提取柚子皮粉中水溶性果胶,再分别用纤维素酶液和果胶酶液从其残渣中提取果胶.结果 热水、纤维素酶液和果胶酶液的果胶提取率分别为12.7%,11.7%和5.5%,总提取率达29.9%.结论 先后用纤维素酶液和果胶酶液提取柚子皮果胶,总提取收率高.
