The report presents secondary analysis findings from the "ArSenic Health Risk Assessment and Molecular epidemiology" (ASHRAM) study. Aim: to quantify exposure from ingestion of inorganic arsenic (iAs) from food. Methods: Participants (n = 540) were controls selected for a case- control study, residents of Slovakia, Hungary and Romania aged 30-79, and were general hospital surgery in-patients (appendicitis, abdominal hernia, duodenal ulcer, or cholelithiasis) and orthopedic and traumatology patients (fractures). Dietary habits were assessed using a validated food frequency questionnaire, and these were linked to iAs contents in rice and potatoes to estimate iAs intake from food at individual level. Results: (The total iAs intake from food for the general population in areas of Central Europe was estimated as 10.14 μg/day (±6.83), and 19.80 μg/day (+20.78) after adding intake from cooking water. Conclusions: The main contributor to daily iAs intake in this population was rice.
