This work has demonstrated an effective analytical approach using SPILDI-MSI for direct assessment of aflatoxins and stilbenes in peanut samples that has proven to be a simple and accurate strategy. Our findings can be especially interesting for product treatment and toxin-removal processes, since it is possible to see that aflatoxins are not only present on the skin surface, but also in the more internal parts of the kernel.
