摘要

The aim of this work consists in assessing the toxicity of 12 genotypes of Emmer wheat (Triticum dicoccum) in relation to coeliac disease. The morphological and physiological characteristics, and the storage protein compositions of these genotypes were determined as well. The toxicological tests were based on the agglutinating activity of the peptic-tryptic digests of alcohol-soluble and acetic-acid-soluble proteins on human myelogenous leukemia K562(S) cells, agglutination being strongly associatedwith toxicity for the coeliac intestine. The Minimum Agglutinating Concentration (MAC) values of the protein digests varied from 100 mg/1 to 512 mg/1, suggesting contrasting levels of toxicity amongst the genotypes analysed.
