The effect of common wheat chromosome substitution of homoeological groups 1 and 6 on the activities of enzymes catalyzing thiol-disulfide metabolic reactions in wheat kernel -thiol: protein disulfide oxidoreductase (DR) (EC 1.8.4.2) and linoleate: oxygen oxidoreductase (Lpx) (EC 1.13.11.12) - has been studied. It is shown that the substitution of chromosome 1A of a low-quality cv on the homological chromosome of a high-quality cv leads to a significant decrease in DR activities and coincides with improvement in some gluten quality indices. There is a significant decrease in Lpx activities in lines with substituion of chromosomes IB, ID and 6D alongside with heightening grain gluten content of the corresponding substitution lines. A possible role ofSH/S-S metabolic enzymes in determining flour grain quality is being discussed.
