    • 摘要: To improve the production efficiency and protein content of rapeseed meal,single bin efficient screen was studied with rapeseed prepress-solvent extracted meal as raw material for concentrated rapeseed meal protein preparation.R-R distribution function of particle size distribution and correlation between protein and phytic acid were analyzed.Single well high efficiency flat sieve was used to produce protein concentrate.The effects of feed rate and rotation speed on screening effect were studied by ratio of screened material and protein con-tent under the sieve.From the particle size distribution and composition of different sizes of raw materials,the opti-mum conditions were found as follows:inlet flow rate was 2kg/min,rotation speed of the flat screen was 260r/min.Under these conditions,the obtained protein content was 56.99%with yield of 26.66%.The concentrated protein obtained by alcohol elution could reach to 60.155%.%为了提高菜籽浓缩蛋白的生产效率以及蛋白含量,以预浸压榨菜籽粕为原料,研究单仓高效平筛制备菜籽浓缩蛋白的工艺.通过对原料的粒径分布以及不同粒径原料的成分分析得到原料粒径分布的R-R分布函数;对原料蛋白质与植酸的含量进行了相关性分析,结果显示两者具有显著的相关性(r=0.9941).利用单仓高效平筛制备菜籽浓缩蛋白,以筛下物得率和筛下物蛋白含量为指标研究进料流量和平筛旋转速度对筛分效果的影响,确定制备菜籽浓缩蛋白的最佳工艺为:进机流量为2kg/min,平筛回转速度为260r/min,在最优工艺条件下得到的菜籽浓缩蛋白的蛋白含量为56.99%(干基),得率为26.66%,经醇洗脱毒后得到的菜籽浓缩蛋白的蛋白含量可达60.155%.

    • 摘要: 以杜仲籽仁粕为原料,利用醇洗工艺提取桃叶珊瑚苷同时制备浓缩蛋白,并采用高效液相色谱法(HPLC-UV)检测杜仲籽仁及其粕、浓缩蛋白中桃叶珊瑚苷含量.结果表明:不同产地杜仲籽仁及其粕中桃叶珊瑚苷含量分别为6.86% ~ 15.44%、5.25%~16.60%.利用含水乙醇对杜仲籽仁粕进行醇洗时,浓缩蛋白和提取液均会变黑,且基本检测不出桃叶珊瑚苷.只有用无水乙醇作为醇洗溶剂时,才能得到乳白色的浓缩蛋白和富含桃叶珊瑚苷的提取液,此时浓缩蛋白的蛋白质含量达到51.78%,较杜仲籽仁粕中提高16.54个百分点.以无水乙醇为溶剂提取杜仲籽仁粕中的桃叶珊瑚苷,最佳提取条件为提取温度80°C、提取时间20 min、液料比8∶1、提取次数2次.在最佳提取条件下,桃叶珊瑚苷的提取率达到94.82%.%With eucommia seed kernel meal as raw material,aucubin and protein concentrate were prepared from eucommia seed kernel meal by alcohol leaching method.The aucubin contents in eucommia seed kernel,meal and protein concentrate were determined by HPLC-UV.The results showed that the aucubin contents in emucommia seed kernel and its meal from different areas were 6.86%-15.44% and 5.25%-16.60% respectively.The protein concentrate and the extract were black and the aucubin could not be detected when the extraction solvent was hydrous ethanol.Only with anhydrous ethanol as extraction solvent,the milky white protein concentrate could be obtained and the extract was rich in aucubin.And the content of protein in protein concentrate was 51.78%,which increased by 16.54 percentage points than eucommia seed kernel meal.The aucubin in the meal was extracted by anhydrous ethanol,and the optimal extraction conditions were obtained as follows:extraction temperature 80 °C,extraction time 20 min,ratio of liquid to material 8∶ 1,extraction times twice.Under these conditions,the extraction rate of aucubin reached 94.82%.

    • 摘要: 以脱皮苦杏仁冷榨饼为原料,采用醇洗工艺制取浓缩蛋白同时脱除苦杏仁苷.通过单因素实验和正交实验得到的最佳工艺条件为:乙醇体积分数75%,提取温度50°C,液料比11∶1,提取时间50 min,提取次数5次.在最佳工艺条件下制取苦杏仁醇洗浓缩蛋白的蛋白质含量为73.61%,苦杏仁苷含量为5.53 mg/kg,苦杏仁苷近乎被完全脱除(脱除率为99.995%).所得产品颜色洁白、风味清淡略有坚果香味,蛋白质NSI值64.61%,是一种优质的食用蛋白产品.乙醇萃取液即苦杏仁糖蜜中苦杏仁苷含量为3.94%,是提取苦杏仁苷的良好原料.

    • 摘要: 以虾加工下脚料所采肉为原料,利用木瓜蛋白酶、菠萝蛋白酶、碱性蛋白酶、胰蛋白酶进行水解,以水解度为指标筛选得木瓜蛋白酶为最佳酶,并采用L9(34)正交试验进一步研究木瓜蛋白酶酶解的最佳工艺条件。结果为固液比为1∶2.5,pH=7.5,酶用量6000 U/g,在55°C下酶解5.0 h,其水解度可达28.12%;将水解液经离心过滤、浓缩、喷雾干燥制得浓缩蛋白粉,经检测其所含水分3.21%、灰分3.05%、脂肪3.26%、蛋白质90.16%,可作为调味品、作为功能食品的补充成分或饲料添加。%Rate of hydrolysis degree of for the papain was used as an index with processing shrimp as the raw material, trypsin was screened out from papain, pineapple proteinase, alkali protease and trysin.The technological parameter of hydrolysis degree was optimized by L9(34)orthogonal experimental design, the result for the solid-liquid ratio is 1∶2. 5, pH=7.5, add enzyme quantity 6 000 U/g in 55°Cenzyme solution under 5.0 h, the hydrolysis degree can amount to 28.12%. will the hydrolyzed centrifuge, concentration, the spray drying the enrichment protein powder, measuring the contains moisture content 3.21%3.05%, ash content, 3.26%fat, protein 90.16%, can be as a condiment, feed additives, or as a complement to the functional food ingredients.

    • 摘要: 以星油藤种仁脱脂粉为原料,通过酶法除杂工艺富集蛋白和碱溶酸沉法提取蛋白分别获得浓缩蛋白粉(PPC)和碱提蛋白粉(PPI),并对其溶解性、吸油性、吸水性、起泡性等功能性质进行研究.结果表明:在研究范围内,两蛋白中PPI具有更好的溶解性和更高的黏度,而PPC在吸油性、吸水性、起泡性方面优于PPI.两种蛋白粉的溶解性随pH升高,呈现出先降低后增高的趋势,在等电点附近(pH4~5)最低;两蛋白的黏度在30~50°C内,随温度的上升而降低;PPC和PPI在50°C时,吸油性最好,分别达到154.37%和294.70%.

    • 摘要: 以低温脱溶棉籽粕为原料,选用乙醇洗涤法制备棉籽浓缩蛋白。考察了乙醇体积分数,醇洗温度,醇洗时间,醇洗次数,料液比对棉籽浓缩蛋白产品蛋白质含量的影响。得到的最佳工艺条件为:乙醇体积分数70%,醇洗温度50°C,醇洗3次(每次20 min),料液比1∶7;在最佳工艺条件下,制得棉籽浓缩蛋白产品蛋白质含量为68.25%( N ×6.25,干基),游离棉酚含量下降到0.0354%。为提高产品的溶解性,对醇洗棉籽浓缩蛋白进行物理改性研究,探讨了热水温度,捣碎均质时间,蛋白质溶液pH,超声波处理时间对产品溶解性的影响。得到的最佳工艺条件为:热水温度95°C,捣碎均质时间10 min,蛋白质溶液pH 9,超声波处理时间15 min;在最佳工艺条件下,制得的改性棉籽浓缩蛋白产品NSI由12.30%上升到26.59%,且高于原料棉籽粕的24.46%。%With low-temperature desolventized cottonseed meal as raw material, the cottonseed protein concentrate was prepared by ethanol washing method. The effects of volume fraction, washing tempera-ture, washing time and washing times of ethanol and ratio of solid to liquid on protein content of cotton-seed protein concentrate were investigated. The optimal preparation conditions were obtained as follows:volume fraction of ethanol 70%, washing temperature of ethanol 50°C, washing time of ethanol 20 min for three times, ratio of solid to liquid 1∶7. Under the optimal conditions ,the protein content of cotton-seed protein concentrate prepared was 68. 25%(N × 6. 25, dry basis), and the content of free gossypol falled to 0. 035 4%. The physical modification conditions of ethanol washed cottonseed protein concen-trate, such as hot water temperature, mashed homogenization time, pH of protein solution and ultrasonic time were studied to improve the solubility of the product. The optimal physical modification conditions were obtained as follows:hot water temperature 95°C, mashed homogenization time 10 min, pH of pro-tein solution 9, ultrasonic time 15 min. Under the optimal conditions, the NSI of modified cottonseed protein concentrate prepared increased from 12. 30% to 26. 59%,which was higher than 24. 46% of cot-tonseed meal.

    • 摘要: 对同一种芝麻原料,采用不同前处理方法去除油脂后,研究不同蛋白制取工艺得到的芝麻蛋白的功能性.结果表明:冷榨芝麻粕优于热榨芝麻粕提取蛋白的功能性,干法脱皮芝麻粕优于湿法脱皮芝麻粕提取蛋白的功能性.

    • 摘要: The dietary safety of pumpkin leaf protein products was evaluated in this experiment by using standard methods and experimental models described in the procedures for toxicological assessment on food safety. The result suggested that the LD50 of pumpkin leaf protein concentrate would be higher than 21.501g/kg·bw, which indicated the non-acute toxicity of the experimental material according to the procedures for toxicological assessment on food safety. And.no abnormality was observed after feeding the experimental animals for 30d. Therefore,it was concluded that the pumpkin leaf protein concentrate experimented should not be acutely toxic to the experimental animals.%采用我国《食品安全性毒理学评价程序》中所规定的标准方法和实验模型,对南瓜叶浓缩蛋白制品的食用安全性进行评价.结果显示,该产品小鼠经口LD50值大于21.501g/kg·bw,属无毒级;小鼠30d喂养未显示任何毒副作用.因此,该产品对实验动物不具有急性毒性作用.
