The invention concerns a device (1) for skinning sausages (48),in particular sausages in a chain (48),with a guide channel (2) for the sausage (48),to which is assigned a cutting device (15) for cutting the skin of the sausage (48) and a device (17) for removing the cut skin of the sausage (48), the device (17) having at least one vacuum hollow role (19) trained and rotary in its coat wall (20)for sucking up the dissolved skin.It is intended that the device (17) has an axial air conductor element inserted into the vacuum hollow coil (18) by a cylinder section (30) and that the air conductor element (29) has a suction channel extending into the cylinder section (30),that the cylinder section (30) has a cloak wall aperture (37) for the fluid-technical connection of the suction duct (32) with the openings (19) of the vacuum-cavity roller (18) in a limited first phase of the vacuum-cavity roller (18), and that the air conductor element (29) has a compressed air duct (43),which results in at least one compressed air aperture (44) assigned to a second volume section of the vacuum hollow roll (18) different and limited from the first volume section.
