A cutting system and method for cutting food products are disclosed. The cutting system includes an infeed conveyor comprising an infeed conveyor surface and an outfeed conveyor comprising an outfeed conveyor surface. The infeed and outfeed conveyors are arranged in an end-to-end arrangement. The system also includes a cutting knife defining a cutting plane, wherein the cutting knife moves within the cutting plane when performing the cutting. A cut plane is defined between the ends of the infeed and outfeed conveyors. The cutting system comprises an outfeed conveyor surface facing surface and is arranged relative to the outfeed conveyor surface to enable applying pressure to a portion of food placed on the outfeed conveyor surface while being cut by the cutting knife. It further includes a hold-down device.
