The purpose of this study is to provide a food with a high degree of flavor while maintaining good flavor.The present invention is a food containing a tannin treated protein.It is preferred that the tannin treatment is a soaking treatment of the protein containing material into the tannin containing solution.It is preferred that the digestion of the protein is suppressed.The tannin treatment contains tannin and protein, and the ratio of tannin to protein is 0.08 to 0.6.It is preferred that at least one selected from the group consisting of bread, Udon, rice and meat.It is preferable that it is for kidney disease patients.The present invention relates to a method of producing a food containing a process of tanning the protein containing material.The tannin treatment is preferably carried out with tannin containing liquid.It is preferred to further include drying the protein containing material prior to the tannin treatment step.Diagram
