13,475. Aubry, L. July 26. Residues, treating.-Yeast, dregs, settlings, or like waste materials from breweries, distilleries. and wines are treated to produce a food resembling meat extract, by first removing impurities by sifting &c., and, if necessary, adding ammonium-carbonate solution, and pressing very dry. The product is next intimately mixed with salt or the like, and allowed to stand in the cold, causing the internal water in the cells to be discharged. and dissolving deposited albuminous materials. The mass is next rapidly heated, preferably by adding hot water, and is pressed while hot, the fluid extracted being evaporated down, allowed to settle, and filtered. The taste of the extract is improved by contact with the air. The solid residue, after pressing, can be treated for the production of a food, which, according to the Provisional Specification, is suitable also as food for cattle by means of an artificial digestive such as diastase or other enzyme capable of dissolving albumen.
