Albumen and albumenoids, films or sheets containing.-Edible gelatine is prepared in sheet form by applying a coating of liquid gelatine to a flexible foundation from which, when dry, the coating is stripped as a sheet, and finally, in order to simulate the crinkled appearance of ordinary edible gelatine, placing the sheets in a frame of wire netting, softening by momentary immersion in hot water, and re-drying while in the frame, for example, in the current of air from a blower. A suitable frame comprises members 1, 2 hinged to a rod 3; one member is provided with a series of crosswires 4 having projections 5 formed thereon, and the spaces between these wires are adapted to receive a number of small sheets; if, however, a large sheet is to be treated, then the members 1, 2 are turned back to back.
