Process for treating abomasum for manufacture of rennet

Rennet is manufactured from the abomasum of adult as well as suckling ruminants by separating the glandular mucous layer from the stomach wall, dividing it into small pieces and then dehydrating it for 6-10 hours at 37 DEG C. in trays or rotary drums. Chymosin or rennin can be separated from this material by extraction with a suitable solvent.
