A method of improving the solubility of low methoxy pectin in liquids containing polyvalent metal ions, and pectin material suitable for making jellies with such liquids
The solubility of a low methoxyl pectin, i.e. a de-esterified pectin of acid equivalent weight 250-500, in a liquid containing polyvalent metal ions, e.g. calcium ions, is improved by means of soluble pyrophosphate. The pyrophosphate may be a mixture of a neutral and an acid salt, and may be added to the liquid together with the pectin. Examples are given of preparations of pectin of acid equivalent weight 288 with neutral sodium pyrophosphate (Na4P2O7,10H2O) and with both neutral sodium pyrophosphate and acid sodium pyrophosphate (Na2H2P2O7,6H2O), used for forming jellies with milk. Starch and the colouring and flavouring materials commonly used in jelly making may be incorporated into such preparations.
