Sterilizable milks derived from nuts such as almond or coconut milk, are prepared by crushing or grating the nuts to obtain a powder with a grain size of 5 to 15 microns, and adding this powder to water to form a dispersion wherein to this dispersion is added a stabilizing emulsion consisting of pectin and water. Preferably the end product milk has a pH of less than 6 - this may be achieved by the addition of an acid such as citric acid. The stabilizing emulsion may also contain an emulsifying hydrophilic colloid and a sugar. Fresh, dried or fermented nuts may be used.
