A process for purifying an ungelatinized cold water-soluble or cold water-swelling hydroxyalkylated starch material (as defined) comprises washing the starch material in a mixture of water and a monohydric alcohol maintained at a pH below 7 for a time sufficient to remove substantially all undesirable contaminants from the starch material, the water and the alcohol being present in the mixture in a weight ratio of from 0À1:1 to 0À7:1; and thereafter separating from the mixture the purified starch material. Suitable monohydric alcohols are methanol, ethanol &c. The starches used may be modified, e.g. cross-linked, acid-thinned, oxidized &c.
