Auto-oxidn.-stability of animal or plant oils and fats contg. traces of heavy metals, e.g. Fe, Cu or Ni, which act as auto-oxidn. catalysts is improved by (a) intimately contacting the oils or fats with solid citric, malic or tartaric acid, provided (1) acid is used in sufficient amt. so that at least a greater pt. of it remains undissolved after contact, (2) temp. of fat or oil remains below m.pt. of acid during contact, and (b) sepg. the undissolved acid from fat or oil. Fats or oils consist of triglycerides of an aliphatic carboxylic acid, esp. edible oils or fats. During mixing with acid, fats or oils are present as liqs. In intermittent working, 0.001-0.1% w.r.t. oil, of acid particles are mixed with oil. In continuous working, the oil may be passed, as liq. through a stationary bed of acid particles, pref. mixed with particulate inert filter.
