The pressure release valve in the pressure cooker lid is operated by a lever which is shaped like a cam near its axis of rotation which is at right angles to the valve axis so that by pivoting the lever the valve can be forced out of the housing member on the lid to the required extent so that the steam can be allowed to escape as slowly or as quickly as desired. The lever can be mounted on the valve member and supported with its cam-like recess on the housing element or it can be mounted on the housing element or a separate holder resting thereon and supported by its recess on a projection of the valve member. The valve can be held in the respective position by the lever so that the operator can continue with other work.
