An expanded dairy product, for example an ice cream, having a degree of expansion of 1.4 to 2, comprises sugar and milk and/or cream, together with 0.1-1 wt % of a stabiliser to prevent syneresis, for example gelatin, 0.2-1 wt % of a stabiliser to preserve the expanded structure, for example gum arabic, tragacanth, kasaya, or guar, pectin, or caragheenate, or an alginate, and 0.2-3 wt % of a starch material, for example cereal flour or a starch such as potato starch.
