Foodstuff compsn. consists of crushed green or black olives mixed with oil contg. flavourings which have an antiseptic and preserving effect. The oil is mixed with decoctionof thyme, rosemary, fennel, bay and sage in 25-35 degrees alcohol. It is also mixed with crushed capers macerated 10 days in olive oil and contg.small amts. of ascorbic and sorbic acid. Condiments such as mustard, pepper, tomato concentrate, anchovy paste and lemon juice are also added. The prod. can be stored indefinitely without pasteurisation and has no bitter taste.
